I've had several friends ask me for my soup recipe, as they like it very much. So I'll share it with the world: 1 bag mixed dry beans 1/2 bag wild rice 1 sweet Vidalia onion 1 red pepper 2 lbs strip steak 2 tbsp fajita seasoning 1 tsp granulated garlic 6 carrots 6 stalks celery 1 29 oz can diced tomatoes 1 tbsp granulated garlic 1 tbsp salt 1 tbsp ground sage 1 tbsp oregano 2 tsp black pepper ------------ 1 more tsp granulated garlic 2 more tsp salt 2 more tsp ground sage 1 more tsp oregano Soak the beans and rice overnight. While those are soaking... Cut the strip steak into 1/4" strips. Dice onion and pepper into fine bits, then sautee these items with the fajita seasoning and 1 tsp of garlic until the veggies are soft and the meat is browned. Store in frig overnight. Rinse the beans/rice, fill a 5 quart pot 3/4 full of water and put beans/rice into the water to boil. Put in first batch of garlic, salt, sage, oregano, and black pepper. Boil until the black beans are tender and the rice is soft, stirring every few minutes. Cut carrots and celery and steak into bite-sized pieces. Once the beans/rice are ready, pour carrots/celery/steak/onion/red pepper into water, and then pour can of diced tomatoes into it. Add the remaining spices. Simmer until carrots and celery are tender, stirring every minute or so. I live off that for either lunch or dinner most of the week. It's very tasty, it's hearty, it's healthy, and it's inexpensive. |
